Hawaiian Mimosas





Bring a touch of the tropics and the sign of hospitality to your next brunch or before dinner with an Hawaiian Mimosa.





Ingredients:
1 (20 ounce can) crushed pineapple in heavy syrup (chilled)
1 (750ml) bottle of champagne chilled
4 cups ice cubes
1/2 cup powdered sifted sugar
1 tablespoon unsweetened shredded coconut
fresh pineapple
mint sprigs
Preparation:
Step 1. In blender, combine 1 cup crushed pineapple, 2 cups champagne and 2 cups ice cubes, blend until smooth.
Step 2. Pour into a pitcher, repeat with a second batch.
Step 3. Combine coconut with powdered sugar. Dip rims of cocktails glasses in pineapple mixture.
Step 4. Pour mimosas into prepared glasses. 
Step 5. Garnish with fresh pineapple wedges and mint springs.
Makes 8 8 ounce mimosas
