Lavender Cookies
Make a delicious (and as always easy) lavender cookie with a hint of lemon and lavender.
Ingredients for 3 dozen cookies:
2 1/2 cups sugar
2 teaspoons lavender buds (unsprayed)
2 cups butter, softened
1 egg
1 tsp vanilla
zest of 1 lemon
4 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Preparation:
Step 1. Combine sugar and lavender buds in food processor until well combined. Reserve 1/2 cup of the Sugar lavender mixture.
Step 2. In a mixer bowl beat butter, 2 cups sugar-lavender mixture, egg, vanilla, lemon zest, and juice until fluffy.
Step 3. Combine flour, baking powder and salt. Stir into butter-sugar mixture just until blended.
Step 4. Refrigerate covered at least 1 hour.
Step 5. Roll part of dough 1/2 inch thick on lightly floured surface. (keep remainder of dough refrigerated)
Step 5. Cut with 4-inch diameter cookie cutters. Place on ungreased cookie sheets. Sprinkle with reserved sugar-lavender mix.
Step 6. Bake in 375 degree preheated oven until set but not browned 6/8 minutes. Allow to set on baking sheet for 1 minute before removing to wire racks to cool.
