Dilled Lobster Salad Sandwich
{Serve this sandwich at your next
spring/summer soiree.}
Ingredients for 8 sandwiches:
1 1/2 cups cooked and cubed lobster meat
3/4 cup blanched snow pea pods sliced in 3
1/2 cup peeled diced cucumbers
1/4 cup diced red bell pepper
1/4 cup sour cream
1/4 cup mayonaise
3 tbs snipped fresh dill
1 1/2 tsp fresh lemon juice
1/4 tsp kosher salt
2 drops tabasco
8 rolls
8 thin slices tomato
Bibb or red Boston lettuce leaves
Preparation:
Step 1. In a large bowl combine first 4 ingredients. n a small bowl combine sour cream, mayonnaise, lemon juice, dill, salt and Tabasco.
Step 2. Fold sour cream mixture into lobster mixture. Refrigerate covered for several hours.
Step 3. Serve with sliced rolls, topped with lettuce and tomato.
