Spinach Salad




A great way to get some quality vitamins and iron is to whip up a fabulous spinach salad.

This one is fast, easy, delicious, and most definitely worth a try.


Ingredients for 6 servings





 -Sweet and Sour Dressing
- 4 slices of bacon
- 12 cups stemmed, washed, and dried fresh spinach
- 1 cup very thinly sliced red onion
- 1 8-ounce can water chestnuts, drained, rinsed, and coarsely chopped
- 2 cups mung bean sprouts
- 2 cups sliced fresh mushrooms
- 1 hard cooked egg peeled and coarsely chopped
Preparation :
Step 1. Cook the bacon in a skillet until crisp. Drain on paper towels and coarsely crumble.
Step 2. Toss spinach, onion, water chestnuts, and mushrooms in a large bowl. Toss with the Sweet and Sour dressing and divide on 6 plates. Sprinkle with egg and bacon.
Step 3. Serve.
Sweet and Sour Dressing:
Ingredients:
- 6 tablespoons light corn syrup
- 3 tablespoons red-wine vinegar
- 1 1/2 tablespoons tomato paste
- 2 teaspoons canola oil
- 1 1/2 teaspoons worcestershire sauce
- 3/4 teaspoons salt
- Freshly ground pepper to taste
Preparation:
Step 1. Combine all ingredients in a small bowl or jar
Step 2. Whisk or shake until blended
